Our Winemaking   

     Our winemaking starts with elevated vineyards that produce exceptional grapes. For harvest,
     press and fermentation, we use the gentlest techniques. Our wines are kept in separate lots with
     focused barrel regimes and we maintain control over every step in the process. We have invested
     in our own stave mill in France to ensure a constant supply of the highest quality of oak barrels
     in which to age our wine.

     Quality oak barrels are an essential component of winemaking. The use of small, fine oak barrels
     significantly enhances our wine quality. For our Chardonnays, fermenting the wine in barrels adds
     complexity and imparts pleasing flavors such as vanilla, spice, nutmeg, clove and a creamy texture.      For our reds, aging the wine in wood softens the tannins, enhances the color and adds structure,
     body, and complexity.

     White Oak Forest in Frnce: Growing in the ideal forest regions of France, white oak is the pre-
     ference for the majority of LaVance wine barrels due to its structural and complex flavor profiles.

     Following the commitment to ensure quality in every aspect of our winemaking process,
     LaVance invested in a French-based stave mill and formed a partnership with a leading cooperage
     company. We craft the highest quality barrels by hand-selecting the wood from the top forests
     in the world. Expert stave mill owners season and craft the staves, and the world's most
     experienced coopers create and toast our barrels. Control over our own barrel making allows us
     to match barrel styles to individual wine varietals, and ultimately increase the quality and complexity
     of our wines.
